Why is pruning necessary?

After these days of constant activity during the harvest, it would seem that the vineyards enter a lethargic state, but no, the cycle continues, and we have to start preparing the vines for the coming year.  Once all the leaves have dried and fallen, it’s the moment to prune.

But, what constitutes the pruning?  How is it done?  Is pruning the same everywhere?  Or even more to the point, are all vines pruned the same?

Anna Espelt, director and winemaker in Espelt Viticultors, explains this to us in the following video.
