Una recepta que marida a la perfecci\u00f3 amb aquest vi 100 % carinyena de vinyes velles i s\u00e0vies. <\/h2><p><strong><img decoding=\"async\" alt=\"\" src=\"https:\/\/espeltviticultors.com\/uploads\/ckeditor\/1590488966_IMG_20200417_141328.jpg\"\/><\/strong><\/p><h3 class=\"wp-block-heading\">Comabruna: 100% carinyena de vinyes molt velles<\/h3><p>Despr\u00e9s de fil\u00b7loxeres i turistes vam perdre el nord i ja no sab\u00edem qu\u00e8 volia dir fer vi a l\u2019Empord\u00e0. Necessit\u00e0vem retrobar les arrels. Busc\u00e0rem vinyes velles i vam estar de sort : en vam trobar una de molt vella i molt s\u00e0via, que amagava carinyanes que amb prou feines aixecaven un pam de terra, una que s\u2019entenia b\u00e9 amb la Tramuntana, una que tenia unes arrels tan fondes que coneixia cada escletxa d\u2019aquests esquistos tan pobres i delicats, una vinya que mirava a llevant i coneixia el que passava nord enll\u00e0 on diuen que la gent \u00e9s neta i noble, culta, rica, lliure, desvetllada i feli\u00e7. Asseguda a les feixes centen\u00e0ries \u00e9s f\u00e0cil veure el mar mentre les suredes de l\u2019Albera ens abracen i Sant Quirze de Colera ens recorda tots els que han passat per aqu\u00ed abans que nosaltres. El vi d&#8217;aquestes feixes \u00e9s el Coma Bruna.<br\/><br\/>ComaBruna, 100% carinyena de les vinyes velles de Rab\u00f3s, plantades fa m\u00e9s de cent anys. Unes vinyes que les han vistes de tots colors, per\u00f2 que malgrat tots els sotracs del temps han seguit endavant fins regalar-nos aquest vi que ens emociona cada cop que el tastem, com si fos la primera vegada. Elegant, estructurat i robust. Un vi intens i nervi\u00f3s com la tramuntana que pentina aquestes vinyes de muntanya, on hi creix el roman\u00ed i el bruc. <br\/><br\/>Li van b\u00e9 totes les receptes de ca\u00e7a de p\u00e8l, carn de bou i talls greixosos de porc ib\u00e8ric, presa o secret. La recepta guanyadora \u00e9s una mostra de les receptes de xup-xup\u00a0que tan b\u00e9 funcionen amb el ComaBruna: estofat de poltre, d&#8217;Enric Bassegoda. El vi el pots trobar a <a href=\"https:\/\/espeltviticultors.com\/en\/product\/comabruna\/\">la nostra botiga<\/a>, la recepta te l&#8217;haur\u00e0s de fer tu!<\/p><h3 class=\"wp-block-heading\">Estofat de poltre<\/h3><p><strong>Ingredients<\/strong>:<\/p><p>1 kg de carn de poltre tallada a daus<br\/>1 ceba gran<br\/>2 carrotes<br\/>un parell de cullerades soperes de tomata<br\/>mitja ampolla de vi negre<br\/>mig got de brou<br\/>un grapat de ceps<br\/>farina<br\/>oli, sal i pebre<\/p><p><strong>Procediment:<\/strong><\/p><ol class=\"wp-block-list\"><li>El primer que cal fer \u00e9s un bany de sal a la carn: poseu-la amb un litre d\u2019aigua i 30 grams<br\/>de sal durant una hora. Passat aquest temps, s\u2019escorre l\u2019aigua i s\u2019eixuga la carn.<\/li><li>Tot seguit feu un sofregit amb els alls i la ceba i a continuaci\u00f3 hi afegiu les carrotes, tallades a daus<br\/>petits, i la tomata. Salpebreu al gust. Al final hi afegim els ceps. Si eren secs, guardeu<br\/>l\u2019aigua del remullat.<\/li><li>Marqueu els daus de carn que abans s\u2019han enfarinat. Al final de la cocci\u00f3 i ja sense la<br\/>carn, poseu una mica de vi al fons de la paella per recuperar el fons de la carn.<\/li><li>En una cassola que pugui anar al forn poseu la carn, el sofregit, l\u2019aigua dels bolets, el<br\/>brou i el vi. Que cobreixi la carn per sobre d\u2019un dit. Si teniu pebre en gra, afegiu-n\u2019hi<br\/>quatre o cinc. Feu arrencar el bull tot junt i s\u2019enforna tapat durant dues hores a 140-150<br\/>graus.<\/li><li>Acabada la cocci\u00f3, si es vol reduir la salsa, es pot coure al foc sense la carn entre deu i<br\/>vint minuts, en principi no cal. Si ho feu quedar\u00e0 m\u00e9s brillant si hi afegiu un parell de<br\/>daus de mantega. Aix\u00ed s\u2019aconsegueix que vingui m\u00e9s untuosa. Podeu rectificar de sal i<br\/>pebre, si \u00e9s necessari.<\/li><li>Per acompanyar va molt b\u00e9 un arr\u00f2s blanc, patates al vapor o en pur\u00e9.
